I don't have the materials at hand, but I remember reading that Jackrabbit
Slim's was a set constructed on a soundstage at Disney studios.

The outside was a bowling alley not sure where the inside was constucted!!

Regarding the question of whether Jack Rabbit Slims is a real restaurant:
QT wanted to create a place that people would try to find if they came to
LA. Seems that he's succeeded.

The diner may also be found in "Cops and Robersons."
