This is just personal opinion. Don't try to do painting in scientific way.
I don't think you can feel the touch of masters fully from pictures.
OK,maybe a little. But YOU have to get the technique by yourself.
I would recommend to 1) paint a lot 2) go see paintings in the museum or
art gallery 3) see book if you can't do 1) or 2). Just enjoy painting.
Smell the water color. You should master the nature of water and interaction
with brush.

I don't think this assignment is desirable. The purpose of doing art is
not to follow someone else's technique but to feel good about yourself and
your work done all by yourself,in your way. If I were you,I would ignore
this assignment. Instructor should let students just enjoy works of masters
not force them to use the same technique.

Basically ignore someone else's advices. You can enjoy someone's work.
But that's it. If you're crazy about someone's work,you'll naturally
be affected by his/her work.
Try to experiment with brush,colors and papers. Choose whatever you like.
Every medium has its own character and you choose what you like.
My advices above may sound silly and maybe I will get many flames
but that's all about painting and art.
I wish I could paint beautiful lands of Autralia someday in my life.
