Japanese art styles are largely derived from Chinese styles, so it would
probably be a good idea to study Chinese art too.
The authoritative text on Chinese and Japanese art is "A History of Far Eastern
Art" by Sherman Lee. It's not cheap, Amazon sells it for $68.

Both of these texts are commonly used in art history classes. That's where I
first encountered them.
Probably the best survey I ever read was "Japanese Art and Architecture" from
the Pelican History of Art series, but it is apparently out of print.
