Portraits: Who has the copyright?

Say, you have painted a portrait of a superstar, a realistic painting,
not an abstract one, and you make big money out of it, and perhaps sell
even some print copies of it... would this infringe the copyright of the
superstar's publishers?

Are there certain legal difficulties a painter should be aware of?

You need to have the subject matter (person) sign a Model Release
agreement. Here's one:
