I like your Old Master copies because I have tried
the same with watercolour. I feel the difficulties and
choices you have encountered.
If they are good for anything, they are an excellent
exercise for mastery of the medium.
Try using watercolour in the same way as oils and
you leave your mistake all over the paper, yet use
watercolour in the way it is best used, and you have
to sacrifice detail, and lose the "exact copy" feel.
In the end, if you allow yourself, you will be
painting original works with better skill.
