In manga volume 35, Nodoka does finally find out about Ranma's curse.
Nodoka reasons that, even when Ranma is a girl, his actions are manly.
Thus, no seppuku.

School of Hard Nox and other chaos...
In Ranma ½ V36 (the manga), Ranma's mother DOES find out about his
curse. As Ranma ½ got up to V38, I guess it's safe to assume that she
let him keep his head (and Genma's too...) ^_^; Upon finding out that
"Ranko" was really Ranma and that Mr. Panda was really Genma, Nodoka
took the two to live at home with her. Thus, Ranma and Genma say
"sayonara" to the Tendo family house. ^_^
