My friend Shamus has a big old Severum who eats virtually anything green
and alive in his tank. He will sometimes shred unpalatable plants instead
of eating them. He has had luck with a few plants though. Crinum bulbs are
doing well in his tank. Java Moss and Java Fern get molested, but not
eaten. They are tough plants. One I would recommend also is Anubias. It is
from Africa and has very tough leaves. Like the Java Fern, it can be
attached to driftwood or rocks and therefore cannot be dug up.
As far as other fish go, his Severum does not bother the loaches, tetras
or even the tiny (<1") checkerboard cichlids that share the tank. That
said, his is a loner. I have heard that Severums can be really mean when
breeding so if you get a pair eventually, any other fish might suffer and
need a new home. I would not keep really aggresive cichlids like Nandopsis
sp., red devils, salvinis, etc. with your severums. Biotope-wise,
I think severums hang out with tetras, Uarus and discus among others.

A couple of minor points: The Severum does, in fact eat the java moss.
He shreds the Java fern for fun. He doesn't eat the leaves of Amazon
swords, but he does dig them up and eat the roots. You might be able
to get away with potted Amazon swords. The Severum does seem to
completely ignore the Anubias nana and the Crinum Thaianum.

The most agressive fish I've kept Severums were Dempsys and Firemouths.
The only fish I've had that have had problems with severums are other
severums. Even if you don't have a breeding pair, they tend to not like
to share the tank with members of their own species. I wouldn't
recommend keeping severums with discus. the discus will probably get
bullied. if you've got plenty of tank space, I'd recommend a medium
big, peaceful cichlid like a festivum or keyhole cichlid.
