I think you should try both. You can look at the results and decide
what you think looks more realistic.
For my Gray-Scott simulations I used about 10 different types of
random starting patterns, including some types of fairly plain random
noise, and some types that included rectangles of random values and
sizes scattered around the grid. No single type of starting pattern is
able to produce all the variety of patterns that are possible in
Gray-Scott.
