Wondering about Wheel sets, chains and cassettes

Wondering where the collective wisdom of so many riders falls in regards to this:

I've got two sets of wheels for my Atlantis- roadish and off-roadish. Both rear wheels have their own cassettes (12-36). Should they each have their own chain as well?

Would it be better to just swap the cassette to the other rear hub when I swap the wheels and save the new cassette for when the current one wears out?

My thought is that each wheel with dedicated cassette and chain will last twice as long so it really seems 'six of one...'

I run two sets of identical wheels, with one set of road tires and one set of gravel tires. the road set has 11-34 cassette and the gravel 11-42 I do not swap the chain when I swap wheels. it shifts exactly the same on either set and lasts as long as a quality chain should last.
