Speaking from too many years in retail, there is always a balance between "everything you want to stock", "everything you should stock", "everything you need to stock" and "what you can afford to devote capital, floorspace, time and energy to stock". It's a difficult, constantly shifting and multi-variable equation. Stuff I've loved and use sits there gathering dust, mocking me in it's unsellability, while that pesky 20% quietly and almost unnoticeably accounts for the 80% of cash flow and sell-through.
IME, Rivendell has always been able to work with their key suppliers of choice to get the right stuff if it isn't on their shelves, or tells you right up front that they can't so you can obtain it. A lot has to do with availability from their suppliers, as well, I'd reckon.
My operating procedure is that if it's something I really want and don't see, I'll ask. But, there have also been times when the stuff they have ready to ship is precisely what I need, even though I thought I wanted something else.
