I was wondering if anyone had any experiance brewing w/water-kefir?

I have run across a few refrences of making ginger beer w/it. As is a
mix of yeast and bacterium w/reputed health benefits sounds
interesting

Still looking for bulk myrica gale, boy for a supposedly pretty common
plant is amazingly tough to find in any qty.

Yes, I am making an ale-water kefir out of a milk kefir colony that I
converted to water. In fact, I had some red yeast rice so I revived
the yeast in that and added it to the kefir grains which now have a
bit of a pinkish cast to it. Comes out OK, seems a little bit thicker
(mouthfeel) than regular ale, and it has more taste undertones to it.
I think I taste a faint hint of plum in it.
