Most stable version of RapidPro and Step-by-step process to set-up

I trust my email finds you well.

I am support a country office on the setting up of the local instance of RapidPro and would appreciate your advice on these two elements :

1. What is the actual most stable version of RapidPro 
2. Do you have any document/link on the step-by-step process to install and launch a local instance of RapidPro?

1. As far as I know, that's v7.4: rapidpro/rapidpro: RapidPro allows organizations to visually build scalable interactive messaging applications. (github.com)
2. For hosting, there's documentation of the design of the system, server and networking configuration here: RapidPro . The repo for each component goes into more details on running each component, eg. nyaruka/courier: Messaging gateway for RapidPro/TextIt. (github.com) , and for third party dependencies (redis, postgresql, elasticsearch, s3) you'll have to refer to the specific documentation for each of those projects.
