Second the chocolate shops!  We were on a bike and barge trip in Belgium last year, and I was surprised that we didn’t see groups of cycling training or any local races.  You should go to Oudenard for the Tour of Flanders museum and shop.  Both Belgium and the Netherlands are great places to ride.
