Help with bean harvest

I'm new to growing beans, so here goes....

I planted royal corona and cannellini beans.  I read how I should wait for the pods to get slightly yellow and then they are ready to harvest, shell, and store.  It's mid-October in New York, and many pods are still green.  I will be leaving soon for the winter and had to clear the garden, so I picked the pods and shelled the beans.  Many of the beans are full size and white.  However, some beans although full size are pale green.  I've laid them out flat on a counter to dry before storing for the winter.

Will the pale green beans dry properly?  Will they store?  Are they ok to cook and eat?

Susan,

I'm not sure if your pale green beans would dry properly or not, depends on how mature they are, but I can say for certain that they are fine for cooking and eating, you may find that you enjoy "shell" beans at this stage as much as dried beans.  We do! If you have more than you can eat before you leave, you can boil them for 5 minutes and then freeze them.

As an aside, after your fully mature beans are good and dry, you can freeze them for a few days to kill any bugs that might  be residing in them, and then store them at room temp until you can eat/plant them.
