I think what you're hoping to do is definitely possible - but I'm pretty sure you'll need a visa of some sort (whether it's working holiday or something similar), and I've no idea how easy it will be to get a longer term visa after that (perhaps others who've dealt with that can offer advice).
There's certainly plenty of opportunities for good Ruby developers here in Melbourne, and I'm sure in Sydney and elsewhere.
