Hosting Radiant and Spree

I'm undertaking my first real independant contract and I'm building a
website with e-commerce for a local electrician (ok its my wife's
uncle). The e-commerce is to sell a number of products that he is also a
distributor for (in-floor heating, generators, UPS, control systems,
etc.)

Naturally I'm going to use radiant for the static stuff and probably
spree for the e-commerce side.

I need some suggestions for hosting. We don't know what the traffic will
be but its probably low (a couple thousand visitors per month to start).
I've considered using DreamHost again (I have a number of sites there)
but I'm not entirely thrilled with the prospect in this case. This seems
like a bad choice for shared hosting but VPS may be overkill.

What I think I want is something that is very low cost to start but that
I can (relatively) easily scale up. More importantly, I know nothing
about managing servers so that's an important hosting feature for me.

What are your suggestions?
