Offset satellite dish geometry

Confession, I'm not a Radio Amateur but a Radio Astronomer.  I have just started a project to use a motorised TV satellite dish for Galactic Hydrogen line reception at 1420.4 MHz.  I will replace the LNB for a Feed Horn/SAWbird III H-Line LNA designed for 1420.4 MHz.
My question is how do I determine the geometry of the offset dish.  How do I calculate the angle of the incoming radio signal.  
The aim of the project is to map the spiral arms of the Milky Way using drift scan and automated elevation, I will fit a accelerometer to the dish to determine the angle.
(Some of you may remember me as the guy doing VLF reception for solar activity and muon flux measurement, I gave a talk at your club a few years back I felt very welcome).

You need to know the offset angle. It might be marked or given in any literature for the dish.

Thanks Steve, good information.  I can now calculate the offset angle, this is not given in any of the manufacturers data.
