Note that in some cases (e.g. Reddit) what you can find on the Web is 5 or even more years old.
Infrastructure and company needs change, and someone who's tried data service X 5 years ago
may or may not be using it today.

indeed.com for "RabbitMQ", about 75% matches are actual users
from a quick glance.
There are public talks on YouTube about their experience from the NY Times and Instagram.
VMware NSX doc guide suggests RabbitMQ is used internally.
We have a couple of decks with pages and pages of known users or customers but we legally can't
name some of the most prolific users. But there are Fortune 50 (including top 10) and multiple
civil govt. agencies plus academia on those lists.
