If you are unfamiliar with Melina, she is a recipe developer, photographer, food stylist, and Food52 resident. She lives in the Hudson Valley, and she and her husband own the Catbird Cottage, a bed and breakfast run out of their home. Her cookbook is filled with recipes made with ingredients from her garden or foraged from the nearby woods and includes recipes for pickling, fermenting, preserving, and more.
The dough, moreover, can be frozen! How nice would it be, come winter, the season of grazing boards and cheese plates, to pull out dough from the freezer and bake off thin and crispy, craggy-edged, seed-speckled crackers? I think these crackers would make a wonderful holiday gift, too.
To make the hats fold a piece of tissue paper in half, measure a 30 cm length (the length of a school ruler and when unfolded it will give you 60cm which goes nicely around a head. Does anyone know how to make potato thins? Nabisco made some back in the 1950's (I'm 72). Potato starch and or potato flour? Have always loved bacon thins and onion thins but can't find them anymore. So, I guess I'll have to make them
myself. Any suggestions?

Hi Laurie! It should be just fine to use your pasta roller attachment to roll out cracker dough. If the herb and other additions are mixed in well with the dough, they shouldn't come out while going through the roller. You could also consider keeping a small portion of the dough without and additions off to the side and roll that one out last to pick up any stray seeds or herbs that might remain. I want to use fresh basil in the Sourdough Crackers. The recipe calls for 2 Tbsp dried herbs, but the usual rule of thumb, to multiply that by 3 for fresh herbs, seems like a lot of basil. What quantity of fresh herbs do you recommend?

For a sweeter cracker, you can brush the warm crackers with some honey and sprinkle with sesame seeds. For a Mexican theme, you could add a little taco seasoning to the batter, then dip your finished crackers in some queso dip. The options are endless!!

I love the shape of crackers and have used it as gift wrap over the years. For holiday 2020, I did a series on unique gift wrapping ideas and offered this as an option. I then decided to do a tutorial as well.
This is a cute way to wrap a small gift. Make sure to wrap the gift in tissue paper first before inserting it inside the middle tube. This will keep it from sliding out of the tube while wrapping. I like it cos it is a fairly easy gift wrap style and does not require a lot of skill or material.

2) Cut your paper towel roll in half, then cut one half of the roll into another half, making three pieces. The longer piece goes in the middle. The smaller ones on the sides. (The smaller ones are just used to help mold the ends and will be taken out later)
