Like no longer using Espresso. Can I take it out of the list somehow?

Espresso is part of the default apps listed in QuickCursor, so it's not something you can delete from QC's preferences.
It used to be that you could go into the application bundle and edit the info.plist file, but that no longer works with the Mac Ap Store version I don't think.

Some options to work around:
1. If you're truly no longer using Espresso, you can delete its plist file (com.macrabbit.espresso.plist) from ~/Library/Preferences and maybe the app bundle as well. That might de-register itself in QuickCursor's list after relaunching QC. I'm not 100% certain but it's worth a shot.
2. If you have Xcode, you can build QC from source (https://github.com/jessegrosjean/quickcursor). First remove Espresso's entry from QuickCursor-Info.plist under QCEditInChoices, then hit Build.

Are you going to keep this app up to date? Even though not in the store?

No, sorry. We can't guarantee a functional app given sandboxing restrictions and issues, and we haven't found a viable workaround for those issues. The source code is freely available and we've opened up the license to anyone, but it's not in active development on our side.
