2. In a large soup pot (at least 8 Qt pot), combine chicken pieces with a halved onion, 2 bay leaves, 2 pierced garlic cloves and 1 tsp dried thyme. Add 5 quarts water and bring to a boil. Using a large spoon, remove and discard any foam that rises to the top. Reduce heat to a low simmer and cook partially covered for 1 1/2 hours. It should be barely bubbling. The chicken meat will be tender and broth will be infused with chicken flavor.

I make this all the time and I add some chopped fresh garlic in the end because I saw you did that once in a video making chicken soup. I also add a squeeze of lemon juice in my own bowl of soup, it really enhances the flavor!

I am writing this while eating this delicious goodness. It is definitely an American style chicken noodle recipe. It is so much better than I expected! I used home style noodles from the Winco bulk section. The only thing I would do next time is add the thyme after taking all that foamy stuff off because I used dried thyme and it was all floating on top so it all came off with the foamy stuff so I had to add another teaspoon. But wow! Amazing flavors! Definitely a keeper!

I made this soup last night, I think it turned out really well, but I am positive that I used the wrong kind of noodles. Would you mind telling me what brand you use? When I search the web for Korean Broken Glass Noodles, I just get recipes for dishes, not any specific brands or further descriptions.

This is my favorite soup from Zoup! and I'm very excited to find the recipe. I really enjoy it and I'm looking forward to trying it at home.

One question though: their website mentions Red Curry Paste as part of the recipe. Have they modified your original recipe?

LF, DF, V, S, GFi - Extremely spicy soup made with red curry paste, Sriracha, mushrooms, scallions, and creole seasoning. Served with gluten free soba noodles. (Caution: This soup is extremely spicy.)

In a soup pot or Dutch oven, sauté the onions, carrots, and celery with the olive oil and butter until softened. Add the garlic and cook for 30 seconds, followed by the flour. Pour in the chicken broth, and stir until the flour has totally dissolved.

We decided to take our famous chicken pot pie recipe and turn it into a soup. You are going to love this creamy and comforting Chicken Pot Pie Soup. It tastes similar to our chicken pot pie, but in soup form, making it the perfect meal for fall and winter. It is on regular rotation at our house right now because it is a great quick and easy weeknight meal.

For me, topping soup with lots of stuff is half the fun, and you have a lot of topping options with this one. I wrote avocado into the recipe because I really feel like that topping is critical and really makes the soup flavors well rounded, but the rest are totally optional. When I have tortilla chips on hand, I like to use those like I would crackers in other soup, crushing them up so they can soak up that awesome broth. A little dab of sour cream would be awesome, as would a few pickled red onions.


After simmering for 45 minutes, the chicken should be tender enough to shred. Carefully remove it from the pot to a clean cutting board, then use two forks to shred the meat into small pieces. Return the shredded meat to the soup pot.

Delicious! Less salty than the soup I get from the Mexican restaurant and much less expensive when made in a batch and frozen. I used poblano peppers instead of jalapeños and used no salt fire roasted canned diced tomatoes. Unbelievably good! Will add to fave recipe board!

This soup is truly awesome. I love the full amount of lemon juice, but it def might be too much for some. I cut back on the carrots (wayyyyy too much in original recipe) and added shitake mushrooms. I also used the stock from my turkey carcass instead. Great flavor.


So delicious! Had frozen the turkey carcass from Thanksgiving and made the stock yesterday. Just enough to make this soup, exactly as directed. So much better than my old turkey soup recipe! Love it! Froze plenty of soup for another day. Thank you!

I made this last night. I added a small amount of brown sugar and zucchini noodles, but otherwise followed the recipe. It tasted awesome, like straight out of a restaurant. I will be making it again soon.

I love thai cuisine and I have made thai red curry chicken using the store bought red curry paste and loved the flavours. Your soup looks amazing with vibrant colours which makes it so tempting. I am sure going to try this out. Thanks for sharing.

Made this tonight with my lady and it was exactly what we were looking for. I love making a roux and then ultimately white sauce, all to pour luxuriously into that chicken soup. With crusty sourdough this was divinity in a bowl. Keeper. Thank you!!
