Most important end-results:
HVM = yes
IOMMU = yes
SLAT = yes
TPM = unknown
remap = yes

Key points of adventure:
Faced a major problem installing qubes where it hangs when installing qubes-mgmt-salt-base-topd.noarch or any other 'salt' related component.

Was able to fully install it without problems by adding Kernel option nouveau.modeset=0
This option works on both Legacy and UEFI
NOTE: Using this option causes the touchpad to not work so you are advised to either use a mouse or go full keyboard through the installation process (You need sharp eyes to successfully roll full keyboard)

After installation through UEFI, Boot options do not see/recognize the EFI boot option on the drive where I installed Qubes. I fixed this with the steps written in: https://www.qubes-os.org/doc/uefi-troubleshooting/#boot-device-not-recognized-after-installing

All's well after all that hassle and so far so good:
Qubes Manager good
AppVMs good
whonix barely touched but seems fully functional
Moving files from vm to vm good
Networking good
Qubes general functionality stable to an acceptable level
Working on getting a Windows 7 Standalone VM up and good (WIP but so far no problems)

As a reminder or precaution, Qubes is definitely not for the faint-hearted nor afraid of many technical shenanigans. Depends on your luck whether or not getting things up and working would require a huge amount of patience. Good luck!

On a side note, this is not using the latest bios version and I'll definitely give it a try using a different storage drive by the end of July and submit another .yml
