Making sure commits to Quarkus 3.15 doesn't break Platform

Hi,

FYI, I set up an additional CI job for the Ecosystem CI of the Platform and we will now make sure that commits to the Quarkus 3.15 branch won't break the Platform.

The idea is to set it up for each LTS.

For 3.15, the tracking issue is https://github.com/quarkusio/quarkus/issues/45119 . I encourage you to subscribe to it if you're a member of the Platform.
