Expansion tank irregularity ?

I have noticed recently that after a run, water level in expansion tank seems to disappear once switched off , however if I open expansion tank later seems to de-pressurise and level comes back up ?
I recently changed stat , coolant sensor , flushed & refilled and new expansion cap.

I have checked for leaks etc. but don't see any issues , and if I had external leak would not fill up again , water doesn't seem oily & no mayo on oil cap.

Try "bleeding" the coolant circuit. It could be trapped air. With the system cold, fill the expansion tank to the brim then dislodge any air by repeatedly squeezing the top or bottom radiator hose (usually the top hose is more squeezable and more accessible). If I'm right you'll hear gurgling noises and air will bubble up through the water in the expansion tank. When done, drain off or siphon out excess water. By the way, a head gasket leak between a combustion chamber and a waterway won't result in contaminated oil, but over a longish period of time might be detectable as a trace of oil in the water (rainbow effect on the surface of the water in the expansion tank).
