Are you holding the soft sip until you hear a beep? It takes a full second by default.
If you hear a click, you are sip/puff-ing too hard. It should make a tone while in the "soft" range to let you know you are applying the correct pressure, then beep after one second.
A lot of people like to shorten the delay time to around 250-300 ms.
I'd recommend turning off "Enable swap inputs with side tube" for now. That is a seldom used feature.
Was the quadstick plugged in when QMP was started for that screen shot? It needs to be plugged in first, then start QMP, make your changes, then save preferences to the quadstick.
I recommend saving a copy of the existing CSV files to a folder on your computer's drive before making changes to make it easy to recover to a known working state from any configuration problems.
