Check out the Datapath X4, or other similar video wall controllers. They're designed for LED Times Square type advertising, but they'll do the job you're trying to do.
Any other thoughts short of a Mac pro with proper video cards? Anyone ever used these USB video output devices? They look untrustworthy, but I have no actual experience with them.
USB video adapters are not recommended, and in many cases won't work at all with QLab. They're not graphics cards, so have no real GPU or vRAM.
