When touring, I always use the venue’s house projector rather than my own.
Because of this, I have to reassign my video patch to the local projector at every venue, which requires a lot of manual adjustments each time.

Is there a way in QLab to set things up so that changing the projector in one place will automatically apply to all video cues, instead of having to reassign them individually?

in QLab 5 Stages and Routes are independent of the video device(projector)  and can be  assigned (and scaled as necessary) by a selection in a single pop up menu in settings/video/output routings
