I'm wondering if there's some piece of software out there that can keep my mouse from venturing over into the second monitor, accidentally appearing on my projection screen during a show. Any suggestions?

Not a piece of software, but trackballs do a pretty good job of preventing accidental mouse straying since it is pretty tough to accidentally bump them and cause the cursor to end up onstage. I use one made by logitech with all my media server computers.

Have a read through this thread, in case anything there is relevant:

You could also arrange your monitors in the Displays preference pane to make it very hard to move to the second monitor: have the monitors join at just a corner for example (they're normally lined up side-by-side, but you can drag them vertically).
