Hi there, I'm new to this and pretty sure, the manual covers it- mybe someone can point me in the right direction:

I have different audios to start and like to replace a list of placeholders with the files necessary for the show. The placeholders are connected to MIDI notes for start and fade out. So basically, I'd like to drag and drop all audios for each show from the finder into the cue list and have the controller already assigned to them. How?

If you drag the audio file on top of the existing cue, it becomes the target.

This is an excellent example of why I subscribe to the "everything is groups" model of qlab programming.

Every cue goes into a group, every time, even if you are SURE there's only going to be one cue inside that group.

Then you assign your triggers to the group, rather than the individual cues.  Now you can swap cues around, add cues to build a sequence, make any kind of changes you need to a specific cue or cue sequence, and your triggers never have to change.

Everything is groups.
