Is there a way to use the iPad remote hardwired rather than over WiFi?

There are Lightning to Ethernet adapters out there, I'll use a powered USB hub with the lightning-USB camera adapter plugged into the iPad, and then the Apple USB-Ethernet adapter plugged into the hub sometimes.  You'll get a new Ethernet item under the WiFi item in Settings where you can set the IP (or use DHCP).

Hi

Also, QLab Remote works over the wire if you plug your iOS device directly into your Mac using a Lightning cable (or UCB-C cable for recent iPad Pros.)
