Milkkefir grains are a combination of live bacteria and yeasts that exist in a symbiotic matrix on a surface of a complex polysaccharide with a casein core. The make-up of kefir grains can vary depending on the culturing location and culturing conditions.

Milk Kefir is made with cow milk, goat milk, or coconut milk. Make your own Kefir at home. All you need is grains, room temperature milk, a strainer, spoon and glass jar with lid.

Strain the grains out of the milk it came with (throw the milk out). Put grains in a glass jar about 1 liter size. Add milk about 2 cups of milk to start. You can increase the quantity of milk slowly with every batch if needed. Make sure milk is room temperature. Close the lid and leave it in a dark warm cabinet. After 24 hrs your kefir should be ready. In summer kefir will be ready sooner and in winters it might take longer to ferment. When you shake the jar and the milk texture has thickened, this is an indication that your kefir is ready.

open the jar and strain the milk. You will be left with grains in the strainer and the strained liquid is your kefir that ready (you can drink it right away or store it in the fridge in glass jar). Put the grains back in the jar and add new milk. Keep this process going and when u want to take a break, put the jar with kefir grains and fresh milk in the fridge. If you taking a long break make sure you change the milk every two weeks.

Not all Kefir Grains contain Kefiran - Exopolysaccharides -the very beneficial sticky stuff whereby the Grains stretch out and grow. our flat sheet Kefiran is clearly visible and developed and offers significantly more Exopolysaccharides than the simple grain itself. The bacteria responsible for for the synthesis of the polysaccharide is Lactobacillus kefiranofaciens. Where the kefir grains are small and separate the lack of Kefiran will be noticeable, as it will be very noticeable when you pull the grains apart exposing the translucent biolfim.


note: the most difficult part of making kefir is retrieving all the grains. Although our Kefir Grains loves freedom and to roam, getting them back for another ferment is easier and more convenient with a Tea Ball, strainer, or cheese cloth bag. Easy just place the grains in the tea ball, place the tea ball in the fresh milk, dunk a few times, cover and ferment. When ready just remove the tea ball and place in a waiting new cup of milk, dunk a few times and ferment. Our 1 1/2 + 2 inch tea balls can hold enough grains for 3-4 cups of milk. We also have larger tea balls and tea bags available.


You can use any kitchen strainer depending upon the size of the holes. The kefir does not stay in contact long enough for any adverse reaction. Stirring helps speed the process. Kefir GRAINS are tough and rubbery, and bounce back under pressure. Curds will disappear under slight pressure or upon stirring. Do not rinse with water. If need be rinse with fresh milk (or your choice) and then recycle back into the new ferment. There is no need to remove all the curds from the grains, and the curds will help the new feremnt along a bit faster.


Lactose intolerant? Our hungry kefir feeds on lactose (milk sugar). Kefired Milk will be lower in lactose - the more sour the less the lactose. Just a little patience and voila - real healthy milk kefir.
