everyone!
I'm reaching out from the Better Food Foundation with an
opportunity for sustainability-minded students. Our
DefaultVeg initiative works with schools, faculty,
students, and companies like Sodexo to reduce the
food-related Scope 3 emissions at colleges and
universities. We’re
expanding ourAmbassador program
to offer training, internships, and learning projects to
hundreds of students so that they can, in turn, be a
resource to help their schools serve more sustainable
food.
What is DefaultVeg?
DefaultVeg is a set of strategies (which we’ve tested through research with Sodexo & Boston College, studies at UCLA and Harvard, and pilots at the University of San Diego and Pomona College), which help schools more effectively reduce Scope 3 emissions through food using defaults and other behavioral nudges.
Our strategies have been covered in Bloomberg and Foodservice Director Magazine, and we presented the results of our study of plant-based defaults with Sodexo (which saw a 23.6% reduction in foodrelated GHG emissions) at the 2023 AASHE conference in Boston.
Plant-based defaults are a recommended strategy by the World Resources Institute’s Cool Food Pledge, and our team has consulted on the standards used by AASHE STARS and the Good Food Purchasing Program.
Because our strategies retain freedom of choice for diners, they are popular and easy to implement—this makes them an ideal approach for students working in coordination with dining staff and sustainability programs at their schools.
In addition to resources and education, the Better Food Foundation’s staff is on hand to support schools when they are ready to try these strategies. We have experience working through existing frameworks (AASHE STARS, Cool Food Pledge, and more) to achieve climate and sustainability, inclusivity, and student learning goals.
There are 3 ways for students to participate in the DefaultVeg Ambassador program:
1)Students in any degree program can sign up independently to receive training and resources and participate in our international cohort of student ambassadors. We’ll help them design a project to suit their own skill level and availability.If you know students who would be interested, pleaseshare this link with them.
2)Students can work with us to fulfill the requirements of their campus internship, service-learning, or community service projects! Please email us to discuss how we can make this program fit with your school’s internship, service-learning, and community service requirements!
3)Faculty can incorporate our Learning Module into course curricula. Developed by faculty at the University of San Diego Center for Food Systems Transformation, our interdisciplinary module helps students develop research and critical thinking skills while learning about our food system. The module will be available in Fall 2024. Please email me if you or any faculty you know is interested.
