Can't compile .proto file anymore after Big Sur update

Since the update, my solution doesn't recognize the .proto compiled classes of the code I already wrote as well...
When I try to build the project, this is the error that comes out:
/Users/enrico/.nuget/packages/grpc.tools/2.32.0/build/_protobuf/Google.Protobuf.Tools.targets(5,5): Error MSB6006: "/Users/enrico/.nuget/packages/grpc.tools/2.32.0/tools/linux_x64/protoc" exited with code 255. (MSB6006) (Server)
Every package is updated to the latest version, Visual Studio for Mac as well
