Contour Patch Releases 1.23.1, 1.22.2, 1.21.2

Hi All,

We have just released patch releases for Contour to address various dependency security updates and to include the latest Envoy patch releases in our example YAML manifests. We have also begun more proactive dependency update scanning with Dependabot and CVE scanning of our repository with Trivy.
