Very interesting and surprising where logic does not equal science. None of us recommend or use deep fat frying however. And the inflections in the curves don't happen for most oils until 60 minutes. So then it comes down to the best antioxidant or texture or flavored oils we use for cooking. Personally, I cannot tolerate too much evod because of bitterness although it might be really good for my body.
