There are now a plethora of gluten-free cookbooks available, as well as books on celiac disease and living a gluten-free life post-diagnosis. Not only are Alanna Taylor-Tobin's recipes gorgeous, but they're also manageable in a way many bakers' are not, while including super inventive use of alternative flours. As far as the whole gluten-free bit? The Joy of Cooking's authors even said Alanna has "rescued gluten-free baking from the pasty, gritty clutches of white rice flour!" No exaggeration, her lemon ricotta biscuits truly taste like actual sunshine.

It's an unfortunate truth: Anyone who goes gluten-free will miss really good bread at some point. Thankfully, Gluten-Free Artisan Bread in Five Minutes a Day pre-empts that craving with a whole bunch of new, straightforward, and unmistakably bread-y recipes. There's hardly a bread recipe this cookbook doesn't tackle, including bialys, challah, and sticky pecan rolls. If the thought of having to avoid gluten feels daunting, River Cottage Gluten Free is maybe the tastiest way to navigate the gluten-free world. Thanks to this cookbook, so many of our favorite gluten-laced favorites are now back on the table (looking at you focaccia and brioche bread). And if you're more of a baker than a cook, we think you'll love the balance of meal-time recipes and sweeter, teatime recipes (including plenty of pastries we've so missed).

We're such fans of Aran Goyoaga, we had to include her baking-specific book in addition to her seminal cookbook. And it's no surprise to us that her newest cookbook, Cannelle et Vanille Bakes Simple, is just that: Super simple baking recipes (like crusty french baguettes and buttery shortbread) that are deliciously unfussy and more than stand up to their glutinous counterparts.

Sarah Britton has been reinventing the way we approach our health and palates for many years thanks to her blog My New Roots. So it goes without saying how much we rely on the My New Roots cookbook when we're in need of some much-needed culinary inspiration. Britton's dishes are plant-based and gluten-free, but they're hardly rabbit food; Her recipes for sweet potato tacos and mint-chip ice cream sandwiches are not only healthy but they're also pretty happiness-inducing, too.

There are hundreds of great gluten free recipes on 101 Cookbooks. Recipes I developed or discovered over the years that happen to be delicious, as well as gluten free. I have a good number of friends who avoid gluten or who are gluten intolerant, so I eventually compiled those recipes into this list for convenient reference. I noticed that you use a lot more liquid (2 Tbsp + 2 Tbsp) in this gluten-free karaage recipe than in your regular karaage recipe (1/2 Tbsp +1/2 Tbsp + 1 tsp), while using less chicken (1.1 lb versus 1.5 lb). Is there a special reason for this? From J. Kenji Lopez-Alt I learned that liquid plays an important role in making coatings crispy. The liquid vaporizes during deep-frying, creating airholes in the coating (= more surface area = extra crispness). Was that the reason?

I used drumettes as that is what I had available at home. They were crunchy and the best I ever made.
I developed a contact wheat allergy about eight years ago and follow a strict avoidance of all wheat.

Today I am thrilled to share this perfectly made gluten-free tempura recipe with you after some testing in the kitchen with a surprisingly great result. Coated with a thinner layer of batter, the tempura with gluten-free batter turns out to be much lighter and crispier than regular tempura. Whether your diet is gluten-free or not, I hope you enjoy this recipe as much as my family does.

At the end of my testing, my family and I concluded the best batter was made with the combination of this gluten-free flour and rice flour. The gluten-free flour is made of garbanzo bean flour, potato starch, whole grain white sorghum flour, tapioca flour, and fava bean flour, and the pancake batter was a lot tastier than a simple quick homemade mix of rice flour, potato starch, and tapioca starch.

These are so good! Pro tip whenever working with gluten free flour in batters, though. Let the batter sit for at least 15 minutes before using because gluten free grains need more time to rehydrate! I think Alton Brown mentions this in his gluten free pancake recipe (link: =j2-p7VKDr0g)
