You have extremely detailed flying sims, several of them. Extremely detailed truck sims, extremely detailed off-road transporting sims, and even extremely detailed train sims. But there are no good simulators for captaining ships. The only ones I can find are rife with poor reviews, and people asking a similar question.
I would love to be able to captain a freighter across the Atlantic, Pilot it into port, and mark a course for the next destination, along with keeping track of cargo. Maybe you can even own your own shipping company, kind of like ETS. Or you could just take a pontoon boat onto a lake, realistically made to simulate actual pontoon boats.
After seeing the world created by Microsoft flight sim, it doesn't seem impossible. You would only have to render coastlines, and the ocean around you could simply be randomly generated. It shouldn't be that hard to get specs for various ships and boats. Along with the general design of various ports. You could even create AI ships to properly crowd the ports.

Another neat feature is the ability to launch a small daughter boat (the Verena and Notarius) from your larger vessel. This is a requirement for some missions and there is a nice first person perspective from both the helm and the side of the boat for plucking swimmers from the water. Unfortunately, the boat handling of the smaller rescue vessel is pretty poor, with a tendency to skid around at low speed as though it were on ice instead of plowing through water. The cut scene of the boat loading and unloading is nice, but there is no skill involved to approaching the loading ramp for retrieval.
Fortunately, for some of the longer missions, there is an option to run the sim at 4x speed. Some of the longer sub-missions can last up to an hour, even with time accel on, so there is a lot of gameplay when you multiply the two geographic areas (North Sea & Baltic Sea) x the missions x the sub-missions. A lot of the gameplay is repetitive, but the story does tend to keep you interested in seeing what is coming next. In keeping with the frustrating lack of wind drift and/or current, there are some other nautical missteps that are kind of aggravating for a sailor like myself. The sailboats sit around tied up to the dock with their sails raised, and on the missions such as the one where you must escort a sailboat back to port, it sails at impossible angles to the wind (like dead into it). Again, not a big deal, but for ship/maritime type enthusiasts, these things are glaring.

Originally built as a tool to enhance the Tampa Power Squadrons (a unit of the United States Power Squadrons) boating safety courses, the multi-vessel interactive trainer or MuVIT boating simulator was developed as a low-cost and easily transported boating simulator built with off-the-shelf components and software that you can purchase yourself to build your own simulator platform.
The cost of the MuVIT simulator hardware aside from the laptop is now under $200 not including the computer if you build it yourself, which is much less than the previous incarnation. It has greater capabilities while still not requiring a high-end laptop.
We have also replaced the ShipSim software with Virtual Sailor NG which has more capabilities and vessels to choose from as well as being a supported package whereas ShipSim had been retired for years. Once set up you can load a large number of vessel types from runabouts to pontoon boats to yachts and sailboats. That said, nothing can replace experience on a real boat to learn the proper skills for boat handling. For squadrons in areas of commercial traffic, numerous large vessels can be downloaded to add to the simulations so students can get a feel for how those craft move and how long they can take to turn or stop.
