The printer I'm working with has 3 cassettes. When the paper in
cassette 1 is empty, the print job automatically pulls from cassette
2. Does anybody know how to change this setting?

I'm not 100% sure what you're asking, however, in the user manual it
shows paper tray settings are in the printers menu, accessible via the
buttons/display on the front of the printer.
Menu / Paper Handling / from here there are several options, including
telling the printer which tray to use as its default.
