Hello,

Is there anyway for PreTeXt to draw something like this?

I see strikeout as a math mode operation, applying to a math expression.

You can create that figure in Tikz.

Hi Tien,

I created this in PreFigure using the attached XML input (if you want the labels to be generated by mathjax, just wrap the label's text in <m> tags).  You could add annotations for a screen reader or even create a tactile version.  PreFigure is still a work in progress but it's easy to do stuff like this.
