At Barcamp 6 I was approached by two fathers- one gave each of his kids a set of kitchen knives and they use them regularly (4 and 6 years old? Don't remember) and the other had his young daughter using a dremel-like tool and some others on a wood project.

A few things i've done with my kids:

Setup a slackline using the 2" tiedowns you get at home depot/lowes-
under $20 and great fun.
Setup a zipline between trees - about $200 because of a very good $90
pulley - cable from HD
Son's clean off patio roof from leaves and acorns.
Lots of barefoot in yard.
Trampoline- flips, hangouts, overnights.
Lots of fire - we have one of those metal firepits, and i ask the kids
to get the fire going using our recycling and fallen wood in the yard-
then lots of play- always on their case about not waving sticks near
people's faces.
Cordless drill and plyers to take apart toaster oven (youngest kids-9 and 11)
