Tuesday June 12th: Chefs Sourcing Locally

Chefs who commit to buying directly from farmers spend a lot of time and money to do so, especially if it comprises a large amount of their purchasing.  We are incredibly lucky that many Oregon chefs have made this a priority and a part of their business model, and they are the reason that many of our Oregon and Washington farms and ranches stay viable.  But there are many hurdles to this model, and while many restaurants may have good intentions, it's always easier (and often cheaper) to just buy from distributors.  So the chefs and restaurants who truly embrace sourcing locally deserve credit and support from us Eaters.  And the more we know about the process, the better we can support it.

We are lucky enough to have some of the pioneers from the Portland area (and Hood River) joining us next Tuesday to discuss their experiences, and to offer up advice on how we can be the third crucial piece in this relationship of Farmer-Chef-Customer.  Joining us are Cory Schreiber - formerly of Wildwood Restaurant, Oregon Department of Agriculture's Farm-to-School Program, and currently running the culinary program at the Art Institute of Portland; David Anderson - chef at Genoa and Accanto Restaurants; Greg Higgins of Higgins Restaurant and co-founder of the Portland Chefs Collaborative; and Kathy Watson of Nora's Table in Hood River, known for its Farm-to-Table menu and Gorge-only wine and beer list.

InFARMation (and Beer!) runs from 5:30-8:30pm at Holocene (1001 SE Morrison).  It is always free, and open to all ages. Speakers run from 6:30-8pm, but come early for drinks & food and for socializing or networking with other like-minded members of your community.  More information about InFARMation can be found here>>
