HERB TIPS
If you'd like to grow herbs to bring inside this winter,
sow the seeds in 4-6 inch pots now and they'll be
set for cool weather. Keep them in a sunny window.
The following work well in pots: parsley, basil, thyme,
oregano, marjoram, sage, chervil, rosemary and
dill.
When you harvest your herbs and have stripped the
stems down of the leaves consider grouping together
the stems instead of discarding them. Tie them in thin
bundles with twine, raffia or string and save them to
use as fire starters.
HERB RECIPES
Lemon Basil Fruit Dressing
Ingredients:
2 tablespoons fresh lemon basil leaves
juice of 1/2 orange, lemon and lime
1 cup lowfat or fat free yogurt
2 tsp. honey or other sweetener
In a blender or food processor, process the basil with
the juices until they are pureed. Add the yogurt and
honey, mixing with a spoon or whisk. Spoon over
fresh fruit or fruit salad.
Lemon Basil Dressing
Ingredients:
3/4 cup light mayonnaise
2 tablespoons lemon basil leaves, minced
1 teaspoon grated lemon rind
1 teaspoon lemon juice
1/4 cup chopped green onion
Mix together mayonnaise, basil, lemon peel and lemon
juice in a jar. Serve with salad of your choice.
Garden Herb Tea Punch
Ingredients:
1 1-liter bottle club soda, chilled
2 cups brewed jasmine or Earl Grey tea
2 cups water
1 cup orange juice
2/3 cup granulated sugar
1/2 cup lemon juice
3 tablespoons fresh apple, pineapple or lemon mint
1 sprig lavender flowers
Place water, sugar, mint, and lavender in a non-aluminum
pan. Bring to a boil, then remove allow this to steep for 20
minutes. Strain the mixture into a pitcher. Add the orange
juice, lemon juice, and brewed tea to the sugar mixture. Chill.
Just before serving, add the chilled club soda.
