Bush's Chicken (stylized as Bush's Chicken!) is a fast food restaurant serving fried chicken. The company is headquartered in Waco, Texas and has over 75 franchise locations in Central, North, South, and West Texas.[1] The chain serves fried chicken, fried okra, fries, mashed potatoes, corn nuggets, jalapeo poppers, yeast rolls and macaroni and cheese. Bush's Chicken also sells sweet and unsweet iced tea by the gallon jug.[2]

The first Bush's Chicken was opened in 1996 in Waco, Texas by Keith Bush.[3] The chain was sold to Hammock Partners, L.L.C. in 2005. The headquarters was moved to Austin that same year. In 2011 Keith Bush's son, Corey Bush, purchased three of the chain's restaurants.[4] After a change in ownership in 2015, headquarters relocated back to Waco.[1]

In December 2012 the restaurant was hit with a lawsuit. The customer accused the restaurant of serving her husband tainted chicken from which he died.[5] Bush's was later cleared of wrongdoing based on medical evidence presented at the trial. [6]

Ground chicken. Because green chicken chili is definitely on the healthier side, I like to stick with ground chicken breast. You could also use regular ground chicken, ground turkey, or even shredded chicken if you have it leftover.

Apple cider vinegar. Whether it comes from tomatoes or something else, for me, every chili needs some sort of acidic note to it. Here, we use a little bit of apple cider vinegar to give the green chicken chili a little zip off acid. You could also use white wine vinegar or even lemon juice.

When making this chili recipe, you can use white or dark meat. I prefer to use dark meat because it gives the chili more flavor. Instead of chicken breast I used boneless chicken thighs. It is up to you what cut of meat you would like to use. You can use rotisserie chicken or boneless chicken thighs.

If you are like me and absolutely can't stand cilantro, you will LOVE the dressing I made for this salad. It has only 3 ingredients and perfect for this side dish. I simply blended sour cream, salsa and ground cumin. So good! It would be great as a topping for tacos as well! I also use it in my Dorito Taco Salad.

I always have several cans of BUSH'S Black Beans in my pantry. I've been adding them to almost every Mexican dish I make. They are perfect substitute for meat because they have 7 grams of protein, 6 grams of fiber, are cholesterol-free, gluten-free and low in fat. I love their creamy taste and texture.

If making ahead, do not add the dressing until just before serving. Also, I recommend keeping the chopped onion separately and stir in before serving. It will prevent the onion flavor from overtaking the dish.

I made this for the first time this evening. My spouse and I are retired and have been looking for more meatless meals for our health and to save money. We both loved it and there is enough left over to make bean burritos tomorrow. I love Bush's Black beans and use them in almost all Mexican dishes. This is going to be a salad we will make on a regular basis.

This salad is good with bush's no salt or lower salt. Black beans...I always use 2 cans. There is enough salt in everything else to make up for the lost salt flavor. I always use great value black bean and salsa. Also I only cook with Vidalia onions. Never get any complaints.


My kids LOVE this! We topped it with some taco meat and diced avocado. It is definitely a family favorite. We actually love cilantro so I make a cilantro lime dressing as well. We are split down the middle. Half prefer the salsa dressing and half the cilantro lime.

As a Baylor Bear, I always do two things when visiting Waco: eat at Bush's Chicken and then regret eating so much at Bush's Chicken. It seems most colleges or universities have their own local food joint that started out by surviving on the continual stream of students spending Mommy and Daddy's money. Then, eventually, its cult-like following causes it to franchise its yummy goodness. UH has Frenchy's. A&M has Freebirds. LSU has Raising Canes. Baylor has Bush's Chicken.

Staying true to the idea that red and yellow make people hungry, Bush's main color scheme is nothing but those colors. This tactic must work, because I feel famished every time I walk into a Bush's. The restaurant's claim to fame is chicken fingers served with white country gravy. During my college days in Waco, the Bush's chicken, dredged in a light crispy batter that I believe consists partly of cornstarch, was always juicy and tender, as if fresh out of the fryer. I would always add black pepper to the side of white gravy for dipping the chicken. I, personally, can't have Bush's without a side of their mashed potatoes.

Fast-forward to this past weekend at the Bush's location in Georgetown. It had been a long time since my last Bush's fix, and I was looking to make up for some lost time. Shown here is their six-piece meal with sweet tea. In the background is an eight-piece liver and gizzards meal. Yes, both meals were for just me. I'll spare you the play by play, but I ended up with leftovers. Why? Because the Georgetown location served stale chicken. The potatoes and gravy were still what I remembered, but the chicken wasn't crispy or juicy. The liver and gizzards were cold.

But despite these issues, I only had one chicken finger and three pieces of liver left before I left. That's how crazy I am about Bush's. Had it been the glorious chicken of Bush's in Waco, I would have needed to take a nap right there in the restaurant before being capable of operating heavy machinery.

It is a variation on the usual chicken salad, a Mexican variation to be exact. Shredded chicken gets mix with green onion, black beans, salsa, sour cream, cumin, and chili powder. Are you hearing the mariachi band yet?

Next, the chicken mixture gets a topping of shredded cheese and then you wrap it into a tortilla! You could use a regular flour tortilla to wrap them in, but I use some fun green tortillas. The kids will never know they have spinach in them, they will just think the green color is fun! I love to sneak in extra nutrition when I can.

This recipe for easy chicken and black bean wraps is ready in less than 30 minutes. This is perfect for those busy football, soccer, or dance class nights. Just have the chicken mixture sitting in the fridge ready to go. Then when dinner rolls around, just add the chicken to the tortilla and sprinkle with cheese. Then you are ready to ROLL! Dinner is now served.

Craving something savory, crispy, and seriously addictive? Give my famous corn nuggets a try! This recipe uses simple, budget-friendly ingredients but transforms them into something impressive. They make a fabulous side dish, snack, or party appetizer.

Corn fritters are almost always sweet and come in a thin, flat shape. They are also pan fried. Nuggets, on the other hand, are deep fried and can be seasoned in a variety of ways- spicy, sweet, or my personal favorite, filled with mozzarella cheese.

Prepare batter. Next, make the batter by combining flour, baking powder, salt, and sugar in a small bowl. In a separate bowl, mix the egg, milk, and melted shortening until a smooth mixture forms. Add egg mixture to the flour batter. Finally, add corn and stir the mix well.

Oven baked corn nuggets: Preheat the oven to 200C/400F and bake these for 11-12 minutes on a lined baking sheet greased with cooking spray or until they become golden brown to dish out and serve.

I understand - I would probably be annoyed with me too, but believe me I would really love to stick my face in a snow bank right about now. Or at least be able to wear a long sleeve shirt without sweating. The struggle is real people.

First, cut up 2-3 chicken breasts into 1-inch pieces. Season it with salt, pepper, cumin and garlic powder. Next, saut the chicken in a little olive oil in a large pot over medium high heat for 6 minutes. Then remove the chicken from the pot and set aside.
