firing up grunt after installing polymer/docs seems to work fine, but none of the md files is shown on my local server!

Ho do I generate the html files out of all md files?

the html files should be generated for you by the jekyll process.

do you have jekyll installed? try running jekyll -v

Isnt there something wrong with line 72?

Yeah that looks like a problem. Also I noticed you had some strange output when you ran jekyll -v, when I run it I just get 'jekyll 2.1.' which also leads to another point... maybe try with jekyll 2.1.1? :D
