So I was using pkg-config just now and tried to compile a plain c file
(within a c++ project).
However, it won't work, since pkg-config does not include the needed
paths/libraries in the C compiler and linker sections, only in the C++
sections.
Maybe including in the pkg-config panel a dropbox to choose the desired
compiler/linker might be a solution to this problem?
However, the settings which pkg-config options are activated etc. would
have to change for each compiler/linker, so this might be more effort
and I'm not sure what this would imply for other toolchains that extend
eclipse.

Thank you for the feedback.
I will take a look and fix this issue as soon as I can. I'll keep you
updated.

Now the options are added to both C and C++ compiler and linker if they
exist. Update to get the latest version.
