Rather than "putting together", let's just say here are my plans. If you want to coordinate, that would be dandy.
Two easy options are to ride a GAP 100 km each day or a GAP century each day. There are RUSA Permanents that get you RUSA credit. Options:

100 km days: Pittsburgh - Connellsville on the GAP or vice versa. That is permanent RUSA 5204. You can ride permanents either way for credit.

Century days - Pittsburgh - Ohiopyle - Connellsville or vice versa. Pittsburgh-Ohiopyle is the permanent database as route 3854. That gets you 80% credit.
My plan this year is Pittsburgh - Connellville (permanent 5204) on Saturday and return on Sunday. Left to my own devices, the weekend looks like this:

I ride out from Pittsburgh leaving the Point perhaps 7 AM for Connellsville.

I normally have lunch at the Kickstand Kitchen.

(If you want to ride a trail century, then after lunch you ride over to Ohiopyle and back. That was me in the past, but not this year).

I've never been to Yough Brewery, so I could see an afternoon visit there.

I have a room booked at the Comfort Inn in Connellsville. I just checked, and rooms are still available there for 9/6 (a bit pricy). Plus there are airbnb's since it is a trail town if you
want a different option.

The Comfort Inn has a pleasant patio for happy hour overlooking the river. I grab something from Sheetz, which sells wine and beer.

Sunday I plan to get a later start coming back, as there is a restaurant overlooking the trail about halfway back for an 11 AM lunch. (If someone wants to ride a trail century, they perhaps
leave early to ride the 20 miles to Ohiopyle and have breakfast there before starting back.
If you haven't ridden a RUSA permanent before, the current program is that you pay $10 for the year to participate that covers insurance. Before you ride, you register your intent to ride the permanent on a given day and sign an online waiver. After the ride
you report your time. Keep electronic confirmation (i.e. Strava or such) in case you get audited. It doesn't happen often (but I was on Sunday). The miles go on your official RUSA mileage record like brevets do (for mileage-based awards).
At this point I am not planning an official bag drop. The course is flat so their really isn't a weight penalty for having panniers or such for credit card touring.
