Pineapple Stuffed Celery

1 bunch celery
1 (8 oz) can crushed pineapple, drained
1 (16 oz) carton low fat cottage cheese
1 tsp sugar
1/2 tsp ground ginger
1/4 tsp salt
paprika (optional garnish)
celery leaves (optional garnish)
Wash celery; trim and separate into ribs; cut into 2 1/2-inch lengths.
Drain cottage cheese, if necessary. Mix cottage cheese, pineapple,
sugar, ginger and salt. Spoon cottage cheese mixture into celery
ribs, mounding slightly.
Garnish with paprika and celery leaves, if desired.
Makes 2 1/2 cups filling
