5 medium sweet potatoes
1 20-ounce can crushed pineapple, drained
1 slightly beaten egg
1 teaspoon butter
1. Peel and dice sweet potatoes. Transfer to a saucepan, cover with water and bring to a boil.
2. Simmer for 20 minutes or until easily pierced with a fork. Drain and add butter. With hand held mixer, beat until smooth.
3. Add pineapple and egg and beat one minute more. Turn out into casserole dish. Bake at 350�F for 25 minutes.
