Does anyone know if there is a way of counting how many different colours and how many of each of those colours are used in the lego generated images?

The graphic design app that calculates this photo effect currently does not generate this "block color histogram" as one of its outputs.

I don't think there is an easy solution to get what you want. Probably you will need to create a program to calculate such data from the Lego image.
