How should we put our training dataset? Should we copy the "ICARE_XXXX" folders to our training data folder? i.e. the training_data directory in the example code.

Hello,
Yes, the "training_data" and "test_data" folders in the README for the example code are folders that contain the "ICARE_XXXX" folders. If you can run the example code on these folders on your machine, then you probably have the right format.
Please remember that we will not include labels with the validation and test sets, and we will run your trained models on the data with only 12, 24, 48, and 72 hours of EEG recordings, so please ensure that your code is robust to these "changes" from the provided training set. The Python example code contains scripts and instructions for generating examples of these data from the training set.
